The Diplome de Cuisine and the Diplome de Patisserie programmes are renowned and internationally recognized, serving as a gateway to a professional culinary career.
French Cuisine: The programme teaches basic, intermediate, and superior levels, focusing on traditional French cooking techniques. Students can apply these skills to create their own savory dishes. Upon completing the 540-hour program, students will receive the Diplome de Cuisine.
French Pastry: This programme covers basic, intermediate, and superior levels, focusing on the art of pastry and dessert-making, from foundational to advanced techniques. Students will learn various pastry techniques, decoration methods, and how to create their own pastry menus under the guidance of French and international chefs experienced in pastry, desserts, and cakes. Upon completing the 540-hour program, students will receive the Diplome de Patisserie.
The Professional Thai Cuisine: This programme is designed by expert Thai chefs and offers knowledge through demonstrations and hands-on practice in our modern kitchen. It is exclusively available at Le Cordon Bleu Dusit Culinary Arts School. The programme covers more than 200 Thai recipes, including traditional, regional, royal, and contemporary Thai cuisine. Students will also learn carving techniques and basic restaurant management. Upon completing the 540-hour program, students will receive the Diplome de Cuisine Tha?e.
The Art of Bakery: This programme focuses on learning the steps and techniques for making French bread, including Danish, regional breads from various parts of France, and different types of dough. The programme covers topics from yeast fermentation to advanced techniques and international breads. The programme duration is 240 hours, and upon completion, students will receive the Diplome de Boulangerie.
